Catalogna Chicory Salad with Pears and Raisins

Detox Salad

Detox salad, ideal for those who need to eliminate toxins from the body by helping the liver. Catalogna Chicory is quite bitter when raw so I recommend:


- use the tenderest leaves and cut the larger ones into small pieces;


- mix it with sweet salad such as lettuce;


- enrich it with vegetables and sweet foods that counterbalance the flavour: pears, peaches, oranges, raisins.



Ingredients

  • lettuce salad

  • catalogna chicory

  • pear

  • raisins

  • peas (even frozen if you don't find them fresh)

  • edamame (even frozen if you don't find them fresh)

  • carrot

  • pumpkin seeds

  • sesame seeds

  • fresh mint and basil

  • olive oil, salt and lemon juice


Procedure:

Soak the raisins for a few minutes in warm water.


Wash all the vegetables and fruit well, pat dry with kitchen paper; cut the catalonia into small pieces.


Blanch the edamame peas and green beans for a few minutes, drain them and place them in water and ice if you want them to maintain a bright colour.


Now compose the Catalonia Salad: make a bed of lettuce, add the Catalongna Chicory, the thinly chopped pear (I used a mandolin but it is also fine in cubes), peas and edamame, the squeezed raisins, the peeled and cut carrot slices, pumpkin seeds and chopped aromatic herbs. Finish with the sesame seeds.


Season with salt, oil and lemon juice.
