If you want to give an unforgettable romantic dinner to the person of your heart, this light and fragrant exotic salad served in pink grapefruit baskets is perfect, beautiful to look at and delicious to the palate. Choose medium/large sized grapefruits so that they can contain an adequate portion.
Ingredients for two people:
12 shrimps
2 pink grapefruits (or orange if you don't like or can't eat grapefruits)
2 avocado
coriander
poppy seeds
evo oil
lime
dry white wine
1 spring onion
pepper
Peel the avocado, cut it into cubes and sprinkle with lime juice to prevent it from blackening. Cut the grapefruits to just over half the height and carefully hollow them out to empty them, keeping aside the juice that will be produced. Remove the white skin from the pulp and cut a certain amount into cubes or segments.
Clean the prawns by removing the shell and the black fillet, leaving the tails. In a non-stick pan, fry a spring onion in a little oil, add the prawns and add some white wine and grapefruit juice (little at a time, tasting to adjust according to your taste). Cook for a couple of minutes and turn off.
Create a base in your basket with the avocado and grapefruit pulp, place the prawns on top, garnish with a few coriander leaves and poppy seeds, season with extra virgin olive oil, freshly ground pepper and a squeeze of lime.
