Today I had 20 minutes for lunch, no desire for ready-made foods so, I brought a pot of water to boil and in the meantime I prepared a tasty raw condiment that speaks italian: taggische olives in oil, yellow date tomatoes, anchovies, and aromas ..perfumes.
Doses for 2:
170 gr of spaghetti
15 yellow date tomatoes (you can use the red ones or the cherry tomatoes)
5 anchovies in oil
12 taggiasche olives in oil (these are tipical Ligurian olives you can use others, better in oil)
3-4 leaves of fresh basil
dried oregano to taste
zest of half organic lemon
evo oil
salt
pepper - optional
Direction:
bring a pot of water to boil, add salt and drop the Spaghetti.
Wash the tomatoes, dab them, cut them in half or in quarters depending on the size or liking .. Put them in a bowl together with the Taggiasca olives, mixed.
Drain the pasta, put it back in the pan, add the tomatoes with the olives, extra virgin olive oil and mix (do not put it back on the heat).
Serve by adding the chopped anchovies, basil, oregano, lemon zest and if you like a grind of pepper ... Ready! Fast and delicious these Spaghetti that speak of Italian flavors and aromas.
I prefer anchovies not cooked but, if you like a more intense flavor, add them together with the cherry tomatoes and olives to the pasta, with the heat they will release more flavor.
